As a chef this book is a vital guide in leading the reader into the structured side of the culinary world. The methods and terms are easy to understand and contain vital information in an easy to read format. This book is for serious chefs and home cooks a like. An invaluable addition to a food enthusiasts library.

I have owned many cook books but have always wanted this one. It is full of comperhensive resipies and ingredient listing so you are not just cooking but learning about what you are put in. A fantastic cook book for anyone.
